Hi and welcome to the last week of May. The summer has been kicked off and it’s time to enjoy peak summer produce. This week is all about Mediterranean flavors as I am wishing for a summer pursuing La dolce vita.

Tomato, cucumber and feta salad is a perfect side dish, or a simple dinner when it’s too hot outside to cook. Tomatoes are sweet and juicy, perfectly complimenting crisp and crunchy cucumbers and salty feta.

Chicken piccata is a classic Italian dinner with bright lemony freshness and the briny tang of caper sauce. Enjoy it with a crisp Sauvignon Blanc or maybe an Aperol spritz.

Spritzers are my favorite summer cocktail to enjoy, and so I’ve also included a recipe for making Aperol spritzes, although there isn’t much to it.

And lastly this week, if you’re looking for a quick, one-bowl cake to make, I highly suggest trying this Italian lemon olive oil cake. I know I gave you a lemon cake recipe a few weeks ago, but this one uses olive oil and is more traditionally Italian. I hope you enjoy it and have a great week. Happy cooking!
